With all this amazing weather, you might be looking for something a little different to serve up alongside all those gloriously sunny garden meals! This is a super easy addition to all your BBQ faves from our Brand Ambassador Chef Gary Guiney! The best thing about it is that these can be pre-made: all you’ve got to do is pop them in the oven to toast that crumb topping just before serving! 

Ingredients:

90g TS Foods Fresh Breadcrumbs

6-7 sweet mini peppers

2 tbsp olive oil

1/2 lemon, juiced

Small handful chopped chives

250g cream cheese

75g crispy bacon bits

Salt & Pepper to taste

Method:

1. Halve the peppers and discard the seeds (keep the stem on as it makes easy to hold).. Place them on a baking tray, drizzle a bit of olive oil over them then bake for 15 mins 200C/180C Fan. Once cooked remove from the oven and allow to cool.

2. In a bowl add the cream cheese, lemon juice, chives and 50g of your bacon bits. Season with a touch of salt and black pepper, give the cream cheese a good stir and fill your sweet peppers with this delicious mix.

3. Place onto a lined baking tray and sprinkle the TS Foods Fresh Breadcrumbs generously over each one, then top with the remaining bacon bits and pop back into the oven until the breadcrumbs are golden (this last step can be done at the last minute if you are preparing these in advance).
