**BREADED FETA WITH TZATZIKI & HOT HONEY**
Want something stunning and totally delicious to serve up to your family and friends? Then this recipe by Chef Gary Guiney is it! Balls of creamy, salty cheese in a crispy crumb are served up with hot honey & tzatziki for a dish that people will just not get enough of – so let’s get cooking!
Ingredients (4 as starter/2 as main):
Feta Cheese Balls:
150g TS Foods Fresh Breadcrumbs
200g Feta cheese
50g Grana Padano cheese
Splash of milk
190g plain flour
2 eggs,beaten
1 tsp of cracked black pepper
Tzatziki:
1 cucumber, peeled, halved & deseeded
400g Greek yogurt
1 lemon, juiced
2 garlic cloves, chopped
3 tbsp white wine vinegar
2 tbsp olive oil
Handful of mint leaves
Touch of salt & pepper
Hot Honey:
5 tbsp runny honey
Chilli flakes
Chopped fresh red chilli (optional)
Method:
- Crumble the feta into a bowl then add Grana Padano, cracked black pepper and splash of milk. Blend to combine and pop into the fridge for 1 hour (to help the cheese set to make it easier to mould).
- While the feta is setting, let’s make your tzatziki! Grate the cucumber and squeeze excess water from it with your hands. Then add all the ingredients into a bowl & and mix well – it’s that simple!
- Remove the feta mix from the fridge and mould into 16 small balls. Dredge each one in flour, then the beaten egg and finally the TS Foods Fresh Breadcrumbs.
- Pop some cooking oil (vegetable or sunflower is perfect) into a saucepan and bring to heat. Drop a few breadcrumbs into the oil: if they sizzle right away, your oil is ready! If not, heat for another minute or two and try again.
- Once the oil is hot enough, fry the cheese balls in batches until golden brown (around 2 mins). Place the fried cheese balls on some kitchen paper to absorb the excess oil.
- For the hot honey, add the honey to a pan, sprinkle in a few chilli flakes (and diced red chilli if using). Cook for 1 min, until mixture is bubbling and remove from heat.
- Place your cooked feta balls on top of the fresh tzatziki and finish with your hot honey.
