***Baked Chicken Parmigiana***
Looking for an amazing way to enjoy some TS Foods Fresh Breadcrumbs this weekend?
This Bakes Chicken Parmigiana uses them not only for coating the chicken breasts, but also on top of the finished dish. This looks really impressive but is so simple to pull together and well worth giving a go!
Ingredients (to feed 4 people):
125g TS Foods Fresh Breadcrumbs
2 chicken breasts
50g plain flour
2 large free-range eggs, beaten
50g parmesan, grated (plus extra for topping)
50g butter
4 tbsp olive oil
300g grated mozzarella (or buffalo if you prefer)
Marinara Sauce:
2 tbsp olive oil
4 garlic cloves, finely sliced
Pinch of caster sugar
700 g passata sauce
2 tsp dried oregano
Method:
1. Cut each chicken breast in half lengthways so you have four fillets. Put the fillets on a board, cover with a sheet of baking parchment or clingfilm and bash with a rolling pin until they are the same thickness all over.
2. Put the flour in a shallow dish and season with a little salt. Put the eggs into another dish, and then the breadcrumbs and parmesan into a third dish (give them a quick stir to combine).
3. Taking one chicken fillet at a time, dip it first in the flour, then in the beaten egg, and finally coat in the cheesy breadcrumb mixture. Transfer the crumbed fillets to a plate as you go and place in fridge while you make your sauce.
4. To make the sauce, heat the olive oil in a shallow pan and sizzle the garlic for 2 mins. Sprinkle in the sugar and add your passata. Add the oregano, season with salt and pepper and cook on a low heat for 10-15 mins, stirring occasionally. Then pour your sauce into an oven proof dish and set to one side.
4. In a shallow pan, pour enough cooking oil in pan to just to let your breaded chicken rest in it. Once the oil comes to heat, carefully shallow fry your chicken for 2-3 mins on each side (until golden brown). Remove and shake off excess oil. Now add the chicken to the oven proof dish with tomato sauce. Top with the mozzarella, more grated parmesan, and another sprinkle of TS Foods Fresh Breadcrumbs and bake for 10-15 mins @ 200C/180c Fan until the chicken is cooked through.
Serve with spaghetti or salad.
