One-Pan Bacon & Mac and Cheese

Colder evenings call for cosier food! And this one-pot wonder from our Brand Ambassador Jill Stewart (@jillbakes_ on Instagram) will be a welcome addition to your Winter weekly meal rotation! 

Serves 6

Ingredients:

Half a bag of The Stuffing Company Savoury Breadcrumb Stuffing

Spray veg oil

12 slices bacon, chopped

1 large onion, diced

500g dry macaroni

2 chicken stock pots dissolved in 700ml

Boiling water

400ml milk

2 tsp onion granules

1 tbsp Dijon mustard

1 tbsp Worcestershire sauce

2 tsp smoked sweet paprika

Salt and black pepper

3 tbsp double cream or creme fraiche

300g cheddar cheese, grated

2 handfuls frozen peas

Method:

  1. Spray a large non-stick oven-safe saucepan (no plastic handle) with veg oil.
  2. Add the bacon and cook over a medium-high heat for 5-6 minutes.
  3. Add the diced onion and cook for a further 3-4 minutes.
  4. Add the macaroni, chicken stock, milk, onion granules, mustard, Worcestershire sauce and paprika. Bring to the boil, then reduce to a simmer and cover with a lid.
  5. Cook for 13-16 minutes (stirring halfway) until the pasta is cooked and the liquid is mostly absorbed. Add the peas for the last few minutes of cooking.
  6. Meanwhile grate the cheese – it’s best to grate your own rather than use pre-grated as it melts better.
  7. Season the pasta with salt and pepper. Add the cream and most of the grated cheese bar one handful – stir through.
  8. Preheat the oven to 190 degrees fan. Sprinkle the remaining cheese and delicious stuffing over the top of the pasta.
  9. Cook for 10-15 minutes in the oven or you can brown under the grill instead.

Serve and enjoy! Any leftovers will keep for a few days and heat up well in the microwave.
