This is one of our Brand Ambassador Chef Gary’s go-to soups because it is so easy to make, tastes great and uses just a handful of ingredients (many of which you probably already have!).
To make things even better, we all love some bread with our soup but he’s added a little TS Foods twist on how you can serve this 😉 So hopefully it will fast become one of your go-to soups too!
This recipe makes one large pot of soup, so it’s perfect for feeding the family midweek, or freezing and saving for the weekend. If you want to make this recipe veggie, all you have to do is leave out the bacon bits, and it will still be absolutely delicious!

Ingredients for the Soup…
2 tbsp vegetable oil
1 onion, sliced
250g potatoes, cubed
2 medium leeks, sliced
1 tsp of Dijon mustard
1.2 litres vegetable stock
75ml of double cream
Method
1. Heat the oil in a large pan and add the onions, potatoes and leeks. Cook for 3–4 minutes until starting to soften and add your mustard (this is optional but I find it really adds an extra depth of flavour!).
2. Add the vegetable stock and bring to the boil. Season with salt and pepper. Simmer for 30 minutes until the vegetables are tender. Whizz with a hand blender or in a blender until smooth. Stir in the cream and that’s your soup all done!
Ingredients for the Crispy Bacon Breadcrumb Topping…
240g TS Foods Fresh Breadcrumbs
100g bacon bits/bacon crumbles (you can pick these up in most major supermarkets)
Small handful of parsley, chopped
1 tbsp olive oil
Method
To make these, simply add the olive oil to a heated pan the add the rest of the ingredients and cook on a low heat, tossing for 10 mins or until golden brown.
