Christmas Cranberry, Apricot & Orange Crostinis

These delightful bites will make a excellent centre piece on your table when entertaining guests over the next few weeks (and word has it that Santa is a huge fan of TS Foods Stuffings 😉).

Ingredients (to make approx 20 canapés):

150g TS Foods Cranberry, Apricot & Orange Stuffing

1 French baguette

200g French brie (cut into little wedges to match the bread)

50g smooth cranberry sauce

Rosemary sprigs to finish.

Method

1. Pre-heat your oven to the required temperature 200C/Fan 180C. Place the TS Foods Stuffing in the centre of the oven, and cook for 22-25 mins until fully cooked through.

2. Slice your baguette (I suggest slicing your bread reasonably thin, about 1/2-inch thick or just under, any thinner, and your bread might fall apart). Brush each slice with olive oil and bake for 8 mins at 170C/150C until golden brown.

3. Once the bread is removed from the oven, place on a board and allow to cool (if you like, you can make the crostini in advance and store in an airtight container for 7 days). Spread with a little cranberry sauce on top, then place a small wedge of brie on top and then carefully spoon on some of the Cranberry, Apricot & Orange Stuffing. Garnish with a little rosemary and enjoy!

(Please note that these can be served as are, or pop under your grill if you would like a hot canapé!)
