We are pleased to present our Brand Ambassador Chef Gary Guiney’s very first recipe for us as Brand Ambassador – prepare to drool!!!
“I’m delighted to share my first recipe as Brand Ambassador for TS Foods! Using their Great Taste award-winning Savoury Breadcrumb Stuffing, this is my epic Chilli, Lemon & Parmesan Crusted Cod (with a cheeky Chimichurri Rainbow Salad on the side 
).
).I love this recipe because not only does baking the fish mean that it’s healthier for you, but it’s made in 30 mins max and – most importantly – it tastes UNREAL!”
Ingredients (to serve 4):
4 cod fillets
150g TS Foods Savoury Breadcrumb Stuffing
3 garlic cloves, crushed
Finely grated zest of 1 small lemon
Small bunch of parsley, chopped
60g melted unsalted butter
30g grated parmesan
1 red chilli de-seeded & diced
1 green chilli de-seeded & diced
Rainbow Salad:
6-7 cherry tomatoes
1 carrot, shredded
1 cup of red cabbage, shredded
1 fresh beetroot peeled & shredded
1 yellow pepper, sliced
1 red pepper, sliced
1 bag of mixed leaves
Chimichurri sauce:
35ml olive oil
2 tbsp red wine vinegar
1/2 cup finely chopped parsley
4 cloves garlic
1 red chilli de-seeded & diced
3 tsp dried oregano
Salt to taste
Method
COD
1. Pat dry the cod fillets to remove excess moisture (this will ensure that the crumb mix will stick)
2. In a bowl add the TS Foods Savoury Breadcrumb Stuffing, parsley, melted butter, chilli, lemon zest and parmesan & mix well.
3. Place the cod onto an oven tray with parchment paper. Drizzle over some olive oil, and carefully spoon the breadcrumb mix on top of each fillet.
4. Pop into a preheated oven @170C and bake for 20 mins until the breadcrumbs are golden brown.
CHIMICHURRI SAUCE (for your salad):
Simply add all the ingredients into a blender and blitz until smooth.
SALAD:
Add all the salad ingredients into a bowl and stir the chimichurri sauce through.
