Ingredients (Serves 2-3):
200g TS Foods Fresh Breadcrumbs
250g Rigatoni pasta
270ml double cream
85g Spring greens
340g Stilton cheese, grated
300g chorizo, diced
50g Crispy Onions, crushed.
Method:
1. Cook your pasta as per pack instructions then drain, saving 1 cup of the pasta water. Rinse the pasta and set to side.
2. Blanch the spring greens in boiling salted water and cook for 2-3 mins the remove and drain.
3. Put a heavy based pan on a medium heat, then add the diced chorizo (chorizo releases lots of it’s own oil so no need to add extra!), then add your spring greens to the pan and toss-cook for 5 mins.
4. Add the cream to the pan, followed by the reserved pasta water and cooked pasta. Now add in the Stilton and reduce the heat to low then cook for 3-5 mins.
5. While your pasta is slowly cooking through, in a separate pan add a drizzle of olive oil and put it over a low/medium heat. Add the TS Foods Fresh Breadcrumbs and crushed crispy onions then cook for 5 mins on a low heat tossing, until golden brown. Remember that these will cook and brown really fast so make sure to keep an eye on the pan at all times and keep the crumbs moving!
To serve, simply add your pasta to the bowl, top with your crispy onion breadcrumbs mix and enjoy!
